For the Milk:

  • 1/3 cup cashews
  • 1 tsp instant coffee powder
  • 1 pitted date

For Coffee Bean Cookies:

  • 70g dairy-free butter, room temperature
  • 40g icing sugar
  • 15g espresso
  • 140g flour
  • 15g cocoa powder
  • 2 tbsp pulps ( after processed by Milky Plant)
  • 1 tsp vanilla extract
  • 10g dough


Prepare the Milk:

  1. Add the ingredients to the blending compartment, ensuring not to exceed the Max line.
  2. Fill the water tank with clean water.
  3. Press the start button and wait a couple of minutes for Milky Plant to work its magic.

For Coffee Bean Cookies:

  1. In a large mixing bowl, cream together the dairy-free butter and icing sugar until smooth.
  2. Add in the espresso, flour, cocoa powder, pulps and vanilla extract.
  3. Mix until a dough is formed.
  4. Preheat the oven to 170°C (340°F).
  5. Divide the dough into small balls, approximately 10g each.
  6. Shape the dough balls into coffee bean shapes.
  7. Place the shaped cookies onto a baking sheet lined with parchment paper.
  8. Bake in the preheated oven for 17-18 minutes until the cookies are set and slightly golden.
  9. Remove the cookies from the oven and let them cool completely on a wire rack.
  10. Once cooled, serve and enjoy your delicious coffee bean cookies!
