Ingredients:
- 90g melted butter, cooled
- 50g brown sugar
- 50g caster sugar
- Pecan pulp (after processed by Milky Plant)
- 1 tsp vanilla extract
- 125g all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- 60g chocolate chips
- 60g chopped pecans
- Preheat the oven to 180°C (350°F).
- Prepare a baking sheet and set aside.
- In a large bowl, whisk together the melted butter, brown sugar, and caster sugar until no lumps remain.
- Add the pecan pulp and vanilla extract, and mix until well combined.
- Whisk in the flour, baking soda, and salt.
- Fold in the chocolate chips and chopped pecans.
- Use a cookie scoop to scoop the dough and place it onto the prepared baking sheet.
- Flatten each ball of dough with your palm into a circle.
- Refrigerate the cookie dough on the baking sheet for 20 minutes.
- Bake the cookies for 18-20 minutes, or until the edges are very lightly browned.
- Let the cookies cool completely before removing them from the baking sheet.
- Serve the cookies with the homemade pecan milk.
