Porridge Season: 5 Warming Bowls Made Better with Fresh Plant Milk

The clocks have gone back, the mornings are dark and the air has a bite to it. This is the time of year when a cold smoothie loses its appeal and a warm bowl of porridge starts to feel like the only sensible way to begin the day.

Porridge is cheap, filling and endlessly flexible. But the liquid you cook it in makes all the difference. Water gives you something thin and grey. Carton milk can leave a faint aftertaste. Fresh plant milk, made the same morning, turns a simple bowl of oats into something rich, creamy and worth getting out of bed for.

Below you'll find why oats deserve a place on your table, why fresh milk matters, and five warming bowls to see you through November and beyond.

Why oats make such a good breakfast

Oats are rich in beta-glucan, a soluble fibre that turns thick and gel-like when it meets liquid. That gel is what gives porridge its creamy texture, and it's also why a bowl keeps you full until lunch.

Beta-glucan has real science behind it too. The European Food Safety Authority has concluded that oat beta-glucan has been shown to lower blood cholesterol, and that foods should provide at least 3 g of it per day to carry that claim (EFSA). A meta-analysis of 28 randomised controlled trials found that 3 g a day reduced LDL cholesterol by about 0.25 mmol/L (FoodNavigator-USA).

Oats also bring protein, insoluble fibre and plant sterols. When you cook them in oat milk, you add a second helping of the same goodness.

Why fresh plant milk makes better porridge

Cooking oats in water works, but the result is flat. Milk adds body, natural sweetness and a silky finish, which is why most porridge lovers never go back.

Many carton plant milks are built for a long shelf life rather than flavour. Their labels often list added oils, gums, acidity regulators and sugar. Those extras can make porridge taste slightly processed, and some can split or turn gluey when simmered.

Fresh plant milk is just the nut, seed or grain plus water. It tastes clean, lets your toppings shine, and you choose exactly how thick or thin it is. Making it fresh also means no cartons piling up in the recycling bin all winter.

Fresh milk before the kettle boils, with Milky Plant Plus

Making plant milk by hand on a dark weekday morning is a hard sell. Soaking, blending and squeezing a nut bag is not how anyone wants to start the day. Milky Plant Plus takes all of that away.

Add your oats, nuts or seeds, pour water into the tank and press the milk icon. The machine strains the milk from the pulp automatically, and fresh milk is ready in under three minutes (Milky Plant). It makes up to 1 litre per cycle, enough for a family's porridge and a few coffees besides.

Two features make it especially good for porridge season:

  • Hot or cold milk. Choose warm milk and it goes into the pan already heated, so your oats cook faster.
  • Self-cleaning. Press the cleaning icon and it rinses itself, so there's no extra washing-up before work (Milky Plant).

It makes oat, almond, cashew, hazelnut, soy, coconut and many more, so every bowl below can start with its own fresh milk.

Five warming porridge bowls to try this month

Each recipe serves one. The base is the same every time: 50 g rolled oats simmered in about 250 ml fresh plant milk for 4 to 5 minutes, stirring often, with a pinch of salt.

1. Apple cinnamon oat porridge

Milk: fresh oat milk

Grate half an apple straight into the pan with the oats and add ½ tsp cinnamon. The apple melts into the porridge and sweetens it naturally. Top with thin apple slices, a few chopped walnuts and a drizzle of maple syrup.

2. Chestnut and maple porridge

Milk: fresh almond milk

Stir 2 tbsp chestnut purée into the porridge in the last minute of cooking. Finish with crumbled roasted chestnuts, a splash of maple syrup and a pinch of nutmeg. It tastes like a November market in a bowl.

3. Chocolate hazelnut porridge

Milk: fresh hazelnut milk

Whisk 1 tbsp cocoa powder and 1 tsp maple syrup into the milk before adding the oats. Top with toasted chopped hazelnuts and a few squares of dark chocolate that melt into the surface. A breakfast that feels like dessert.

4. Golden turmeric porridge

Milk: fresh cashew milk

Add ½ tsp turmeric, ¼ tsp ground ginger and a pinch of black pepper to the pan. Cashew milk keeps it extra creamy and mellows the spice. Top with sliced banana, toasted coconut flakes and a few pumpkin seeds.

5. Savoury miso porridge

Milk: fresh unsweetened soy milk

Skip the sweetness entirely. Cook the oats in soy milk, then stir in 1 tsp white miso off the heat. Top with sautéed mushrooms, wilted spinach, sliced spring onion and a few drops of sesame oil. Ideal for anyone who prefers a savoury breakfast.

Tips for perfect porridge every time

  • Toast the oats first. A minute in a dry pan before adding milk brings out a nutty, biscuity flavour.
  • Always add salt. A small pinch makes porridge taste sweeter and rounder, even in sweet bowls.
  • Keep the heat gentle. Fresh plant milk has no stabilisers, so a low simmer stops it catching on the bottom of the pan.
  • Loosen at the end. Porridge thickens as it sits. Keep a splash of fresh milk back and stir it in just before serving.
  • Use the pulp. Stir a spoonful of leftover oat or almond pulp into the pan for extra fibre and body.
  • Prep the night before. Weigh out your oats and toppings so the morning is just milk, pan and bowl.
