Ingredients:
For the milk:
- 1/3 cup almonds
- 1 tsp cinnamon powder
For the gingerbread spice mix:
- 1/3 cup almonds
- 1 tsp cinnamon powder
For the cookies:
- 370g all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp gingerbread spice mix (from above)
- 1/4 tsp salt
- 85g butter (of your choice)
- 150g brown sugar
- 170g molasses
- 30g gingerbread almond pulp (after processed by Milky Plant)
Instructions:
For the milk:
- Add ingredients to the blending compartment. Make sure not to pass the Max line.
- Fill up the water tank with clean water.
- Press the start button and wait a couple of minutes for Milky Plant to work its magic.
For the cookies:
- In a food processor, combine almonds and cinnamon powder to make the gingerbread spice mix. Set aside.
- In a large bowl, sift together the all-purpose flour, baking powder, baking soda, gingerbread spice mix, and salt. Set aside.
- In a stand mixer, whisk together the butter, brown sugar, molasses, and gingerbread almond pulp until well combined.
- Gradually add the dry ingredients to the wet ingredients in the stand mixer. Mix on medium/low speed until a smooth ball of dough starts to form. Be careful not to overmix. Add more flour if needed.
- Wrap the dough in plastic wrap and refrigerate for at least 2 hours.
- Preheat the oven to 180°C (350°F).
- Roll out the chilled dough on parchment paper or a baking mat to a thickness of 1/4 inch. Try to make the dough as evenly thick as possible. Refrigerate the rolled-out dough for an additional 1 hour.
- Using a gingerbread house cookie cutter, cut out the shapes and transfer them to parchment-covered baking sheets.
- Bake for 12-15 minutes or until the edges are golden brown. Remove from the oven and allow the cookies to cool completely before handling.
- Decorate the cookie pieces with royal icing and let them dry completely.
- Use stiff icing to assemble the gingerbread house, attaching the pieces together. Allow the assembled house to set before moving or further decorating.
