Ingredients:
For the Milk:
- 1/3 cup cashews
- 1 tsp instant coffee powder
- 1 pitted date
For Coffee Bean Cookies:
- 70g dairy-free butter, room temperature
- 40g icing sugar
- 15g espresso
- 140g flour
- 15g cocoa powder
- 2 tbsp pulps ( after processed by Milky Plant)
- 1 tsp vanilla extract
- 10g dough
Instructions:
Prepare the Milk:
- Add the ingredients to the blending compartment, ensuring not to exceed the Max line.
- Fill the water tank with clean water.
- Press the start button and wait a couple of minutes for Milky Plant to work its magic.
For Coffee Bean Cookies:
- In a large mixing bowl, cream together the dairy-free butter and icing sugar until smooth.
- Add in the espresso, flour, cocoa powder, pulps and vanilla extract.
- Mix until a dough is formed.
- Preheat the oven to 170°C (340°F).
- Divide the dough into small balls, approximately 10g each.
- Shape the dough balls into coffee bean shapes.
- Place the shaped cookies onto a baking sheet lined with parchment paper.
- Bake in the preheated oven for 17-18 minutes until the cookies are set and slightly golden.
- Remove the cookies from the oven and let them cool completely on a wire rack.
- Once cooled, serve and enjoy your delicious coffee bean cookies!
