Pecan Coconut Cookies

Pecan Coconut Cookies - A harmonious blend of flavors designed to satisfy your taste buds!


  • 110g vegan butter
  • 60g caster sugar
  • 40g brown sugar
  • 1/2 tsp vanilla
  • 150g plain flour
  • 1/2 tsp baking powder
  • Coconut pulp (after processed by Milky Plant)
  • 30g desiccated coconut
  • 60g pecans, roughly broken


  1.  Preheat the oven to 180C/350F. Line two baking trays with parchment paper and set aside.
  2. Beat the vegan butter and sugars together until pale and fluffy.
  3. Add in the vanilla, flour, and baking powder; mix to combine.
  4. Tip in the leftover coconut pulp from making the milk and mix through.
  5. Into the bowl, add the desiccated coconut and pecans; mix until well distributed.
  6. Divide the mixture into evenly sized balls.
  7. Place on the prepared baking tray and bake for 10-12 minutes until baked through and lightly golden at the edges.
  8. Leave to cool for a few minutes on the tray before transferring to a wire rack to cool completely.
