Ingredients:
For the Blueberries and Cashew Nuts Milk:
- 1/3 cup blueberries
- 1/4 cup cashew nuts
For the Ice Cream Filling:
- 100g coconut whipping cream
- 100g room temperature cream cheese
- 65g condensed coconut milk
- 60g blueberry purée
- Blueberry pulp ( after processed by Milky Plant)
- 1 tsp vanilla extract
- 1/8 tsp salt
For the Cookies:
- 110g softened butter
- 25g powdered sugar
- 30g condensed milk
- 1/4 tsp sea salt
- 1/4 tsp vanilla extract
- 100g wholemeal flour
- 100g all-purpose flour
Instructions:
For the Blueberries and Cashew Nuts Milk:
- Add the ingredients to the blending compartment. Make sure not to exceed the Max line.
- Fill up the water tank with clean water.
- Press the start button and wait a couple of minutes for the Milky Plant to work its magic.
For the Ice Cream Filling:
- Cream together coconut whipping cream, cream cheese, and condensed coconut milk using an electric mixer until smooth.
- Add the blueberry purée and blueberry pulp, and mix to combine.
- Pipe the mixture into molds.
- Place the molds in the freezer to set.
For the Cookies:
- In a medium bowl, cream together the butter, powdered sugar, and vanilla extract until smooth.
- Add the wholemeal flour, all-purpose flour, and sea salt; mix until combined.
- Add the condensed milk and mix until a dough forms.
- Refrigerate the dough for 1 hour.
- Roll out the dough and cut out cookies with a cookie cutter.
- Carefully transfer the cookies to prepared baking sheets.
- Bake in a preheated oven at 175°C for approximately 20-23 minutes or until lightly golden brown.
- Allow the cookies to cool completely.
Assembly:
- Place the blueberry ice cream filling between two cookies to make a sandwich.
- Place the ice cream sandwiches in the freezer for at least 1 hour before serving.
