Ingredients:

  • 3 ripe bananas
  • 1/4 cup (60ml) melted coconut oil or vegetable oil
  • 1/2 cup (100g) brown sugar or coconut sugar
  • 1 teaspoon vanilla extract
  • 1 1/2 cups (180g) all-purpose flour
  • 2 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon (optional)
  • 1/4 teaspoon salt
  • 1/2 cup (120ml) banana pecan milk ( freshly made with Milky Plant)
  • Banana pecan pulp (after processed with Milky Plant)
  • chopped pecans (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Add the melted coconut oil, brown sugar, vanilla extract, and banana pecan milk to the mashed bananas. Mix well to combine.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix; a few lumps are okay.
  5. If using chopped pecans, fold them into the batter.
  6. Pour the batter into the prepared loaf pan, spreading it evenly.
  7. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
  8. Once baked, remove the banana bread from the oven and let it cool in the pan for about 10 minutes. Then transfer it to a wire rack to cool completely before slicing.
