Ingredients:
For the plant milk:
- ½ scoop almonds
- ¼ scoop cashews
- ¼ scoop coconut
For the granola cups:
- 1 banana, mashed
- 120 g oats
- 80 g maple syrup (~60 ml)
- 1 tbsp peanut butter
- 1 tsp cinnamon
- A pinch of salt
- Plant pulp (leftover from Milky Plant)
For the topping:
- Vegan yogurt
- Fresh berries
- Nuts (e.g. almonds, cashews)
Instructions:
- Fill the water tank with clean water.
- Insert the filtering sieve into your Milky Plant Plus.
- Select the “0.5 L | Cold Milk” function.
- Add the almonds, cashews, and coconut to the blending compartment. Be careful not to exceed the maximum line.
- Press start and let your Milky Plant create a creamy plant-based milk.
- Preheat the oven to 180°C (350°F).
- In a bowl, mix the mashed banana, oats, maple syrup, peanut butter, cinnamon, salt, and plant pulp until well combined.
- Divide the mixture into cupcake liners and press it firmly to form small cups.
- Bake for 25–30 minutes until golden and set. Let them cool completely before removing from the molds.
- Fill each granola cup with vegan yogurt. Top with fresh berries and nuts.
