Ingredients:
Hazelnut Milk:
- 1/3 cup hazelnuts
- 1/2 tsp vanilla extract
Cookies:
- 180g all-purpose flour
- 30g almond meal
- 30g cornstarch
- 110g dairy-free butter or coconut oil (cold & cut into small cubes)
- 1 tsp vanilla extract
- 20g nut pulp (after processed by Milky Plant)
- 25g hazelnut milk (freshly made with Milky Plant)
- Pinch of salt
Caramel:
- 50g sugar
- 45g dairy-free butter
- 1 can (320g) coconut condensed milk
- 1 tsp sea salt
Instructions:
For Hazelnut Milk:
- Add ingredients to the blending compartment. Make sure not to pass the Max line.
- Fill up the water tank with clean water.
- Press the start button and wait a couple of minutes for Milky Plant to work its magic.
For Cookies:
- In a mixing bowl, combine flour, almond meal, and salt. Pulse until well combined.
- Slowly add the cold butter or coconut oil, mixing until a coarse meal is formed.
- Gradually add the nut pulp and hazelnut milk. Pulse until a dough ball forms.
- Divide the dough into 2 balls, shape each into a disk.
- Roll out one of the dough disks to a 1⁄4” thickness.
- Cut out dough and shape into desired patterns.
- Transfer the cookies to prepared baking sheets.
- Bake in a preheated oven at 175°C for approximately 12-14 minutes, until the edges turn slightly golden.
- Remove from the oven and place on a cooling rack.
For Caramel:
- In a saucepan, cook sugar over low-medium heat, stirring constantly until it forms clumps and melts into a thick brown caramel.
- Lower the heat to low and immediately add butter, stirring until melted and combined.
- Continue stirring and cook for 1 minute.
- Slowly and carefully pour in the condensed milk. Keep stirring with a high heat-resistant spatula.
- Continue cooking for 4 minutes until slightly thickened. Add sea salt and stir for an additional 1 minute.
- Remove from heat and allow to cool slightly before pouring into a jar or container.
Assembling the Cookies:
- Take the regular-shaped cookies and place caramel in the middle of each cookie.
- Cover with the other cookies on top.
